There are mushrooms and there are black truffles. And then there is black tea and there is Darjeeling. While we all love the “basic” versions of things, sometimes you want something with a little more depth, character, and elegance. This is why Darjeeling teas are called the “Champagne of Teas.” Darjeeling gets this flavor through its unique harvesting, rolling, and Indian terroir (that means soil to tea nerds like us). What you end up with is a tea that is lighter and less “bitey” than most black teas, yet more layered and complex than green teas.

Ingredients

100% Biodynamic and Organic Darjeeling Tea

description_tab

This particular Darjeeling is known as an Autumnal Darjeeling from the famous Makaibari Tea Farm. The owners actually live on the farm and provide for over 600 families. In 1971, Makaibari decided to move to a “beyond organic” approach that believes the sum is greater than the parts. This means that instead of using chemicals to fertilize the plants, they allow native plants and herbs to grow alongside the plants instead of being pulled as weeds. The tea plants are then allowed to integrate into the overall ecosystem of the local rainforest to create a fully biodynamic and organic tea farm.

There are few things that we love more than a nice, brisk cup of tea in the morning. The English even have a saying for it - a tea strong enough to “stand up a spoon.” Especially when we have a full traditional breakfast of eggs, meat, toast, and other salty foods (like a true Brit would eat). This is why our friends on the other side of the pond love this tea. Strong enough to cut through the richness of breakfast, yet tasty enough to drink on its own.

Ingredients

Organic Black Tea

description_tab

This blend starts with three distinct Indian teas. First, we chose an Assam tea that borders the Brahmaputra River. This particular farm is especially affected by the monsoon season where the temperature rises to over 100 degrees, which creates a greenhouse effect that brings out the famous malty, full-bodied taste that Assams are known for.

The second Indian tea is a second flush, mountain-grown Darjeeling. The high elevation gives this tea an amber, medium-bodied tea that has a slight floral aroma. It also has a distinct spicy flavor that is full of tannins helping to give this tea its characteristic bite.

To help round out the blend, we use a South Indian Nilgiri tea grown south of the Western Ghats mountains. While not a high elevation tea, this particular farm is in the hills of the Nilgiris District giving it a strong flavor with a full body. We were lucky to find a plantation that makes a full leaf tea in this style.

Lastly, we add Chinese Keemun from Anhui Province between the Yangtze River and Yellow Mountains. Keemun has a smooth flavor with wisps of smokiness and unsweetened cocoa. The Keemun really helps to balance out this blend and add a layer of flavor and complexity most English Breakfast teas lack.

The Irish love to drink and drink all day long (tea, that is). But while they may be known for some of the finest beers and whiskies in the world, they actually drink more black tea than almost any other country. So it is safe to say the Irish really know their stuff. That is why we wanted to make this tea as delicious and as complex as their spirits. Big, bold, and malty. A tea strong enough to handle whole milk and sugar, yet refined enough to have subtle notes of fruit, roasted nuts, and honey. In fact, we chose two of the most esteemed tea farms in the region. The first is the small, family run Tonganagaon Tea Estate, which is found in the Eastern Assam Valley right next to the Namdapha National Reserve. The natural biodiversity of the reserve helps to create rich soil that gives this tea its smooth, malty flavor with notes of ripe cherries and dark prunes.

The next tea we used was from the Dooars region, which is located in the floodplains of the Eastern Himalaya Mountains. This farm sits on a narrow strip of land that joins the Assam and Darjeeling tea growing areas next to the Sankosh River. The result is a briskness similar to a Darjeeling tea, yet the malty notes with hints of hazelnut and honey.

Real Chai is almost impossible to find here in the U.S. If you don’t believe us take someone from India to any upscale coffee chain and order a Chai. It should never, ever use any type of “natural flavorings” or any other shortcuts you would find in those premade boxes. Using the real stuff gives you a drink that is as delicious as you can find anywhere in India. And by everywhere I mean every single train station, bus station, café, street corner, and household.
